Simple and easy to make dish. Just need the right items. I have had this dish a couple of times at Chipotle and my recipe came out very close to what is served at Chipotle.

Stir Fry:
Slice capsicum and onions longitudinally. Heat a table spoon of oil in a pan and add sliced vegetables. Stir fry the vegetables for a couple of minutes and add slat and pepper to taste before turning off heat.

Sauce:
- Boil 4 cups of water in a deep dish.
- Make light scores on tomatoes using a knife.
- Drop 2 tomatoes at a time into boiling water. In about 2 to 3 minutes you can notice the peel separating from flesh. Pick tomatoes from boiling water and drop them into a bowl of cold water. Make sure tomatoes are not hot and peel the tomatoes. Do the same with other two tomatoes as well.
- Make a puree of these tomatoes using a blender.
- In a wide pan, heat a tablespoon of oil. Once the oil gets heated, add Italian herbs. Wait for about 30 seconds and add tomato puree. Add salt and red chilli powder and let the sauce cook for 10 to 15 minutes until the raw smell of tomatoes goes off. Give a mix every 3 minutes to make sure the sauce doesn't get burnt.
